The menu
At Eluna Bay Cove, dining is a shared experience inspired by our ‘House of Friends’ spirit. Our menu brings together small and communal plates that celebrate Morocco’s rich culinary heritage, blending traditional techniques with Mediterranean charm and a touch of European flair.
Crafted by renowned British chef Arman Nijum and brought to life by Head Chef Monu Tusu, our seasonal offerings highlight the finest local and sustainable ingredients. From the souks to organic farms and our own rooftop garden, we source from trusted Moroccan producers to ensure every bite reflects the land, culture, and stories of its people.
We source ingredients from souk vendors, organic farms, and our own rooftop garden. By supporting local growers and artisans, every dish and glass carries the true taste and spirit of Morocco.

Tropical, local and good
We prioritize organic ingredients, sourcing much of our produce locally. Our market garden supplies fresh herbs and salads, while honey comes from our bees. Poultry, eggs, and coconut oil are sourced from our village, and fish is caught by local fishermen. We limit imports to ensure top quality.

The restaurant at Soleil opened in 2001. Over the years, several chefs shaped its kitchen, but none more so than Italian maestro Luca Romano, formerly of Osteria Francescana. His cooking blended traditional Italian with subtle Asian notes, emphasizing seasonal, locally sourced ingredients. His influence remains at the heart of Soleil today.
His 2005 cookbook featuring dishes from Soleil gained global acclaim. In his latest award-winning book Flavors of Soleil, Luca returns to his roots with fresh, simple Mediterranean-inspired recipes—authentic, seasonal, rustic, vibrant, comforting, and elegant—you can recreate at home.
